Menu Plan Monday

Sunday: Easter Brunch and Dinner at family's house- I'm bringing Homemade Cinnamon Rolls and Strawberry- Banana Struesel Muffins for Brunch and Homemade and Hawaiian Rolls.

Monday: Creamy Chicken Enchiladas, chips and salsa, fruit

Tuesday: Sweet and Sour Pork, rice and eggrolls (bumped from last week)- I like this idea for Kabobs. This was bumped again... for Ham and potato soup!

Wednesday: Scott cooks. Tator tot hotdish, green beans

Thursday: Scott cooks. Spaghetti, garlic breadsticks, salad

Friday: Pizza Night (I scored a deal from restaurant.com for a pizza place close to us... Family Night out?)

Saturday: Rootbeer Roast Pork in the crock pot, roasted sweet potatoes, carrots

Menu Plan Monday

It's our Spring "break" this week- really just an extra long weekend this year. So I planned some lunches for Scott and the boys for those days.

Sunday: Maple Mustard Chicken Thighs, quinoa, carrots

Monday: Breakfast for Dinner. French Toast, berries, sausage

Tuesday: Sweet and Sour Pork, rice, egg rolls

Wednesday: Scott cooks. Chicken tacos, chips and salsa, Southwest salad

Thursday: Scott cooks. Hotdogs, beans, chips and fruit salad (pushed from last week)
Kids off School Lunch: Grilled Cheese and tomato soup

Friday: Homemade pizza night, salad
Kids off school Lunch: Homemade chicken tenders and fries, carrots and grapes

Saturday: Thanksgiving casserole, green beans

  • Tuesday: Lasagna, breadsticks, salad


  • Wednesday: Scott "cooks". Turkey noodle soup in the crockpot. rolls


  • Thursday: Scott cooks. Grill Night. Hotdogs, baked beans, chips and fruit salad (bumped for leftover lasagna)


  • Friday: Pizza Night. Salad


  • Saturday: Grill Night. Flank Steak with Chimmichurri Sauce (we ate out with friends last week and Scott tried the gorganzola fritters with chimmichurri sauce as an app and fell in love... not with the fritter, just with the sauce!), roasted potato wedges, salad (need to work on the sauce- I may have added too much garlic? Shocking, I know, since I often triple the amount of garlic in a recipe!)

Easy week of family favorites:


Sunday: Taco Night, Chips and salsa, Pineapple


Monday: Homemade Pizza Night, Salad


Tuesday: Shrimp with Zesty Basil Sauce, Orzo, fruit, asparagus


Wednesday: Scott cooks. Buffalo Chicken Sandwiches with homemade rolls, sweet potato fries, green beans


Thursday: Scott cooks. Spaghetti, garlic breadsticks, salad


Friday: Out with friends to celebrate an engagement


Saturday: Turkey Dinner. Roast turkey, mashed potatoes, stuffing and green beans


I also have some ripe bananas and Scott requested banana cake instead of bread this week. Since I still have the monster cookies I baked last week, I am set for treats too!
