menu plan monday

Sunday: pork ribs, baked sweet potatoes, green beans, cornbread, churro cheesecake bars
 (yummy bars and easy to make!)

Monday: Puff puff pancake, fruit, bacon

Tuesday: citrus glazed tilapia, fruit, spinach salad with mandarin dressing (solid, non breaded fish recipe, vinaigrette with honey, cider vinegar, mandarin orange juice, olive oil, Dijon mustard, S&P)

Wednesday: Scott cooks. Burgers, fries, fruit salad, salad

Thursday: kids' concert. Scott cooks. chicken fajitas, chips and guac

Friday: Pizza night, salad

Saturday: Beef stir fry, rice, eggrolls (Skipped stir fry and did this warm greek salad with sliced steak served with homemade pita folds - I added a touch of honey to the bread- and fruit)
