Tuesday: Butternut Squash Risotto, breadsticks, salad

Friday: Pizza Night, salad
Saturday: Bacon Wrapped Jalapeno Chicken bites, potato wedges, vegies

I also need to make some banana bread and probably some toasted coconut, toffee bit and chocolate chip cookies!

I also made a fantastic potato soup last Saturday. The recipe was from an Arizona cookbook my parents had given me a while ago- Basically, cooked 2 strips of thick cut bacon until brown, removed from pan and added 1 diced onion,4 cloves of garlic and 6 large (or 12 small) peeled and diced potatoes to the drippings. (I actually started the onions and garlic first, then added the potatoes after they sweated a little). Add salt and pepper to taste. (I also added dried chives and parsley here- but in the summer, I would definitely add fresh before serving!) Add enough liquid to cover (I used chicken stock and half and half) and simmer until potatoes are tender. I used a potato masher to break up some of the chunks of potato. While the soup was cooking, I finely shredded 8 ounces of extra sharp cheddar cheese. Reserve about a fourth of the cheese for serving. When soup is ready, stir in the cheese a handful at a time to incorporate. Ladle into bowls, topped with cheese and bacon pieces.... YUM! It's not quite Chili's Baked potato soup (Scott's favorite), but it was pretty good and definitely a redo recipe! (though next time, I might add the small can of green chilis that was in the recipe to give it more of a SW flair- I just didn't have any in the cupboard!)

Sunday: Homemade Chicken noodle soup, sourdough bread
Monday: Chorizo Burritos, salad, grapes (This recipe was awesome! I added some chopped onions and peppers, and extra cheese.... I also found it a great way to use up the extra Taco Bell hot sauce packets that have accumulated around my kitchen!)
Tuesday:Thai Chili Beef Stirfry, rice  This was very spicy- It was good but I think I like some other recipes better - too much fish sauce?
Wednesday: Scott cooks. Spaghetti, garlic bread, salad
Thursday: Scott cooks. Hangover hotdish (ground beef+ COM soup, topped with creamed corn, topped with mashed potatoes) Jake was at his girlfriend's house, and I was working late so Scott and Drew actually just ate leftovers here.
Friday: I'm working- Order pizza Scott did the hotdish here
Saturday: Saturday Night Steak night, roasted/baked potatoes, vegies

I am also making up some Pork Eggrolls (with this Thai chili dipping sauce) for lunch on Tuesday with my CSA cabbage. What Scott and I don't eat, I will freeze for chinese nights throughout the winter!

Menu Plan Monday

Sunday: Roast chicken (xs 2- I'm making extra for other meals this week), potatoes, squash casserole (Lunch: Mac and Cheese, okra fries) Squash Casserole was not so good... I even used a good cheese with it- what a waste!

Monday: Spicy Asian Chicken Soup, Sauteed summer squash (Lunch: Sandwiches, chips, cucumbers) Yummy soup! Kind of like a chicken pho recipe!

Tuesday: Fish (probably cod because it's on sale) with Zesty Basil Butter, orzo, CSA vegies, melon (Lunch: Chicken Quesadillas)

Wednesday: Scott cooks. Beer Braised brisket, mashed potatoes, CSA green beans (Lunch: Pizza) The brisket turned out ok... I think there are better recipes out there that can give it a little more flavor!

Thursday: Scott cooks. Tacos, Chips and Guac, melon (Lunch: chicken sandwiches, fries, vegies)

Friday: Friday Night Pizza Night (sausage and Pepperoni), salad (Lunch: sandwiches, chips, cucumbers)

Saturday: Pork tenderloin, possibly a stir fry, but we'll see. (Lunch: kid's choice) I actually marinated the pork in some cayenne,garlic and lime spiked italian dressing- I know it seems weird, but it really worked at giving it some tang and the cayenne added the hint of heat.... I roasted the port, let rest, thinly sliced... Sliced a baguette into slider size, opened up, toasted in the oven and topped with a spicy jalapeno havarti cheese- Made up the sandwiches with the pork slices, some romaine leaves and a smear of ranch dressing- YUM! I have another tenderloin in the freezer that will probably be getting this treatment in the future!

I also have to use up a zucchini, so I will probably be baking some Double Chocolate Zucchini Muffins. I have used a basic zucchini bread recipe from a cookbook, added cocoa powder and a little extra moisture and chocolate chips. But I may try this recipe. My mom loaded me up with a bunch of tomatoes, so I am going to attempt to can them whole (since I already have 8 jars of salsa and several containers of tomato soup in the freezer from my previous tomato adventures)

Monday: Fried Eggs over Garlicky Swiss Chard, toast, Melon (Lunch: Sandwiches, chips, vegies) Amazingly Yummy- a new favorite for chard!

Tuesday: Shrimp and Cherry Tomatoes over pasta, Salad, Garlic Bread (Lunch:English Muffin Pizzas : I have Zucchini from the CSA and Boursin Cheese in the fridge so I will probably make that one!)

Wednesday: Scott cooks.... or not.  Visiting me and eating hotdogs at a Festival. I'll be there for work. (Lunch: Chicken Nuggets, fries, vegies)

Thursday: Scott cooks. Thanksgiving Casserole, CSA green beans (Lunch: Pizza)

Friday: Chicken Stir Fry with CSA vegies, rice, eggrolls (Lunch:Sandwiches, chips, vegies)

Saturday: Depends on what I do that day if I am home in time.... may plan on some Quick and Easy Gyros, greek salad, fruit (Lunch:TBD: out?) Easy for Scott to do, but not a favorite

I think our 30 year old AC unit may be on it's last leg.... or maybe the lovely repair man can work some magic- Either way, I would like to avoid the oven as much as possible this week!

Sunday: Stir Fry with Chicken, CSA broccoli, peppers, CSA zucchini; rice, egg rolls (Lunch: Mac and Cheese ,okra fries, sliced lengthwise)

Monday: Pork Roast in the crockpot, mashed potatoes, CSA beets (Lunch: Sandwiches, chips)

Tuesday: Crockpot Roast Chicken (still looking for a recipe), vegies, Melon (Lunch: Leftover pork sandwiches, chips)

Wednesday: Scott cooks. Hamburgers, CSA vegies, melon(Lunch: Pizza)

Thursday: Scott cooks. Spaghetti, garlic bread, salad (Lunch: Chicken nuggets, fries)

Friday: Buffalo Chicken Pizza on the grill (with leftover chicken from Tuesday), salad (Lunch: Sandwiches, chips)

Saturday: TBD-Stir fry? it depends on what CSA vegies I get this week, but stir fry always ends up using up a lot of them! Maybe this one would be good because I already have the jalapeno and ground pork on hand and green beans will be coming soon from the CSA (Lunch: kids choice)

Tuesday: Taco Salad, grapes (Lunch: Hotdogs, chips, Cut up vegies)

Wednesday: Scott cooks. Breakfast for Dinner. Eggs? Pancakes? fruit (Lunch: Sandwiches, chips, cut up vegies) I ended up making Feta and Swiss Chard Frittata. I liked it. Scott and boys said that it wasn't awful... though they aren't huge swiss chard fans...

Thursday: Scott cooks. Brats and beans, CSA vegie, melon (Lunch: Pizza) We actually had pork chops, stuffing, vegies and melon here...

Friday: Pizza night, salad (Chicken strips, fries, fruit) Car shopping after work so we actually picked up LeeAnn Chins and used a buy 1 get 1 coupon!

Saturday: Roast Chicken, Corn, CSA vegie (Lunch: kids choice) I actually made this recipe because I had lots of jalapenos to use up... it wasn't anything special and Scott really didn't like the aioli *though maybe it will be good on a sandwich?

A heatwave week- avoiding the oven as much as I can in the early part of the week....

Sunday: Pasta with Pesto, bacon, and CSA peas, salad, garlic bread (Lunch: sandwiches on the boat)

Monday: CSA eggs, toast, homemade sausage patties, berries (Lunch: stovetop mac and cheese)

Tuesday: Grilled Chicken breasts, mashed potatoes, CSA vegie (Lunch: TBD) CSA potatoes! I didn't mash them- just boiled, added butter and chives and slightly squished... yum!

Wednesday: Date Night. I got the free lettuce wrap coupon from PF Changs so we will be enjoying a dinner out. Kids get pizza. (Lunch: hotdogs, chips)

Thursday: Scott cooks. Red Beans and Rice, Salad (Lunch: Pizza)

Friday: Salmon, Rice, CSA vegie (Lunch: Fishsticks, fries) I did Homemade Pizza Night! I had extra sausage from Thursday and it is Friday! Poor salmon got booted again!

Saturday: Dad's Birthday Dinner??? TBD (Lunch: kids choice) I actually made Baked Ziti inspired by this recipe. Only I added ground beef, extra garlic, and CSA spinach.

What a busy couple of weeks- it feels good to be back to a normal schedule...

Sunday: Stir-fried Noodles with Beef and (CSA) Spinach, eggrolls (Lunch: Sandwiches, chips, fruit/vegies)

Monday: BBQ chicken thighs, potatoes, green beans (Lunch: Mac and cheese, fruit/vegies)

Tuesday: Pasta Carbonara (it's from a new RR mag- I looked online and it's not there to link yet), salad, garlic bread (Lunch:Chicken nuggets, fries, fruit/vegies)

Wednesday:Scott cooks. Hotdogs, beans, chips, fruit salad (Lunch: Pizza, I can put fruit or vegies on the menu, but Scott tends to forget to serve them and my food waste becomes out of control!)

Thursday: Scott cooks. Steak Fajitas, melon (Lunch: Spaghetti from the freezer)

Friday:Homemade Pizza Night, Salad. (Lunch: Grilled Cheese and Tomato soup)

Saturday: Pork Chops with mushroom sauce, rice, CSA vegie (Lunch: Kids cook. Leftover Pizza or frozen microwave pizzas)

Last week, I did make a wonderful Chicken Club Sandwich from the newest RR mag as well- The marinade was amazing! Spicy, Garlicky.... that alone makes it a winner!

I also made a Watermelon Granita yesterday- We had a melon that no one wanted to finish eating (overripe- texture was off) so I pureed the flesh, strained it, added some mint-simple syrup that I made for my sun tea and froze... I thought it would be a great treat for the next couple days as the temp and humidity are high- kids said it was ok- I served Scott's in a glass with a splash of Strawberry Rum and some flavored sparkling water- He LOVED it! It was a perfect treat for a hot night!

What a weird couple of weeks.... 2 weeks ago was vacation... Salt Lake was fabulous! We came home late on Father's day, the next day was my birthday and we went out to dinner. On Wednesday, I received a call at work from Scott telling me that he hurt his back and needed to go to the dr.... we ordered pizza that night..... last night we were at my nephew's graduation party.... and this weekend will be weird too due to a couple weddings, the 4th and my son's birthday!

Sunday: Steak, sweet potato fries, carrots (Lunch: Hotdogs, cantaloupe, cucumbers)
Monday: Chicken Stir fry with CSA onions, peppers, rice, egg rolls (Sandwiches, chips and fruit salad)
Tuesday: Frittata with CSA vegies, berries, salad (Lunch: macaroni and cheese, vegies)
Wednesday: Scott cooks. Homemade Pizza, salad (Lunch: sandwiches, chips, peppers)
Thursday: Rehearsal Dinner (Lunch: Pizza)
Friday: Sister's Wedding (Lunch: sandwiches provided by bride and groom- have to be there early for photos)
Saturday: Tacos (Lunch: TBD-depends how tired we are!)

Menu Plan Monday

Summer is started so I also need to plan out lunches for Scott and the boys. Scott and I are headed to Utah this week- I am going there as part of my duties with the Minnesota Optometric Association Board and I convinced Scott to come along- Kind of a cheap vacation since my flights and room are covered! My parents will have our kids and Scott's dad will be here with our big old dog.

So, with only 2 days to plan....

Sunday: Greek Chicken thighs, Quinoa, green beans (Lunch: Beef Pho- I had leftover broth from last week that I saved and a lonely strip steak that I can slice up)

Monday: Steak, Roasted potatoes, mushrooms and onions, salad (Lunch: Macaroni and cheese, fruit)

Tuesday: Vacation!

Sunday: Beef Pho (a family fav)

Monday: Chicken Scampi Penne, (good recipe- Scott really liked it!) garlic breadsticks, salad

Tuesday: Shrimp and Bacon Risotto with CSA vegie (hopefully asparagus again) Yum! I cooked the shrimp on the side with a whole bunch of garlic... and added a big scoop of marscapone to the risotto for extra creaminess.... drooling again just thinking about it...

Wednesday: Scott cooks. Breakfast for Dinner: CSA eggs, homemade sausage patties, toast, fruit

Thursday: Scott "cooks". Asian Lettuce Wraps, (It worked out well for Scott to just heat and serve, but I added extra liquid to give him for reheating on the stove and it didn't cook off like I thought it would so they were a little watery...) quinoa, wontons, fruit (I'll make it on Tuesday so Scott just has to heat and serve on Thursday)

Friday: Take out Night. In an effot to save money for our vacation next week, I pulled a half pound of ground beef from the freezer and found a small container of stuffed pepper filling in there too! Mixed the two together, added a bunch of spice and some tortillas and Taco night it is!

Menu Plan Monday

Sunday: Pork Tenderloin with Raspberry-Chipotle BBQ sauce (I'm making this up with a few frozen raspberries and chipotle peppers in adobo from the freezer added to some store bought BBQ sauce. I am also making cocktail meatballs for the shower at the bride's request. Depending on how this raspberry-chipotle sauce turns out, I may modify them to be more like that versus my normal sauce), sweet potato wedges, carrots

Monday: Track meet until 6. Breakfast for Dinner: Eggs, Sausage, toast, berries (with test mojitos for Scott and myself)

Tuesday: Chorizo and Quinoa stuffed peppers, (the original recipe didn't call for chorizo, but I so love that stuff!) Chips and Chorizo con Queso dip (the dip is a test recipe for my sister's shower)

Wednesday: Scott gets out of cooking! Another track meet, and it's our anniversary! I think the kids are getting pizza after track and we are going out for a nice, quiet date night!

Thursday: Scott cooks. Crab Pasta, breadsticks and salad

Friday: Lemon chicken, rice, green beans

Saturday: My sister's shower: I will bring leftovers home for dinner.


I also have the following recipes lined up as shower possibilities:

Beer bread Already tested: Just as good as the expensive pre mixed box!

Cocktail Jello Squares Already tested: I actually used a sugar free blackberry jello with 1 cup hot water and 1 cup sangria/orange liqueur- a little stronger than I would have liked- it brought me back to my college days! I am thinking I will try it one more time with regular gelatin and kahlua... I don't think I will end up serving it at the shower, but it may show up at a BBQ this summer!

White Cheddar puffs with green onions or Onion-cheese puffs We'll see in a head to head matchup which one wins the honor of being at the shower!

Strawberry truffles If I can find the freeze dried strawberries

Menu Plan Monday

Lots of easy 1 pot meals this week!

Sunday: Loaded Chicken and Potatoes Skillet, salad

Monday: Breakfast for Dinner; French Toast, Bacon, Fruit

Tuesday: Herb Crusted pork chops, Yummy Zucchini Dressing, Salad

Wednesday: Scott cooks. Zuppa Toscana (sausage and potato soup), (I've been making it for years and I don't really know where the original recipe that inspired me is located anymore as I know it by heart now- this is probably the closet to my recipe), Bread

Thursday: Scott cooks. Chicken fajitas, pineapple or grapes

Friday: Pizza night.

Saturday: BBQ Pork Sandwiches, Sweet potato fries, salad

I also am trying to find some special items for my sister's wedding shower....
Winners so far:
Bacon Wrapped potato bites with spicy sour cream dipping sauce (though I am going to use fingerling potatoes...yum!)
Pastry cream filled fillo shells (the bride loved them, but my other sister didn't really like fillo shells...I loved the bite size of them!)
Raspberry Limeade cooler (though it was suggested to use raspberry vodka to bump up the flavor and I used less vodka than called for in the recipe)

Menu Plan Monday

Sunday: Sweet and Sour Pork, rice and eggrolls

Monday: Breakfast for Dinner. French Toast with berries, bacon

Tuesday: Red and Green Pesto with Pasta and Lemon Shrimp, garlic breadsticks, salad

Wednesday: Scott cooks. BBQ pork sandwiches, Oven fries, carrots I have no idea what I had Scott cook here but I know it wasn't this!

Thursday: Scott cooks. I actually had planned tacos here for Cinco de Mayo, but Scott got home late from Jake's first track meet and had picked up a couple pizzas instead, so....

Friday: Scott's out with friends, Pizza Night, Salad Tacos got bumped to here instead!
Saturday: Saturday Night Steak Night (with leftover chimmichurri sauce from the freezer), sweet potato fries, salad My parents called and asked us to come over to celebrate mom's day early so they could go golfing today!

This week was really messed up off my plan- let's hope next week looks better!

Sunday: Easter Brunch and Dinner at family's house- I'm bringing Homemade Cinnamon Rolls and Strawberry- Banana Struesel Muffins for Brunch and Homemade and Hawaiian Rolls.

Monday: Creamy Chicken Enchiladas, chips and salsa, fruit

Tuesday: Sweet and Sour Pork, rice and eggrolls (bumped from last week)- I like this idea for Kabobs. This was bumped again... for Ham and potato soup!

Wednesday: Scott cooks. Tator tot hotdish, green beans

Thursday: Scott cooks. Spaghetti, garlic breadsticks, salad

Friday: Pizza Night (I scored a deal from restaurant.com for a pizza place close to us... Family Night out?)

It's our Spring "break" this week- really just an extra long weekend this year. So I planned some lunches for Scott and the boys for those days.

Tuesday: Sweet and Sour Pork, rice, egg rolls

Wednesday: Scott cooks. Chicken tacos, chips and salsa, Southwest salad

Thursday: Scott cooks. Hotdogs, beans, chips and fruit salad (pushed from last week)
Kids off School Lunch: Grilled Cheese and tomato soup

Friday: Homemade pizza night, salad
Kids off school Lunch: Homemade chicken tenders and fries, carrots and grapes

Saturday: Thanksgiving casserole, green beans

  • Saturday: Grill Night. Flank Steak with Chimmichurri Sauce (we ate out with friends last week and Scott tried the gorganzola fritters with chimmichurri sauce as an app and fell in love... not with the fritter, just with the sauce!), roasted potato wedges, salad (need to work on the sauce- I may have added too much garlic? Shocking, I know, since I often triple the amount of garlic in a recipe!)

Saturday: Turkey Dinner. Roast turkey, mashed potatoes, stuffing and green beans


I also have some ripe bananas and Scott requested banana cake instead of bread this week. Since I still have the monster cookies I baked last week, I am set for treats too!

Sunday: Roast Beef with Spicy Parsley Sauce, roasted potatoes, green beans (The sauce is really amazing- Kind of like a pesto with a hint of tomato and a little attitude from the crushed red)


Monday: Crab Pasta with Peppers, garlic breadsticks, salad


Tuesday: Homemade Mac and Cheese (with my favorite Organic Creamery White Cheddar cheese- it melts so nicely!), vegie, fruit


Wednesday: Scott cooks. Breakfast for Dinner.


Thursday: Scott cooks. Chicken Stir-fry, rice, eggrolls


Friday: Pork tenderloin with spicy apricot glaze, potato wedges, carrots


Saturday:Mahi Mahi with Zesty Basil Butter, Quinoa pilaf (recipe on the back of the bag), green beans (I added crushed red pepper flakes and some lemon zest to the sauce- YUM- Scott wants the sauce again this upcoming week with Shrimp).

Menu Plan Monday

Kind of an around the world theme this week.... my version of a vacation?

Sunday: Flank Steak, Baked potatoes, asparagus, rolls (this was supposed to be Greek Chicken Thighs but we invited my father in law to dinner last week and the 1 steak would not have fed us all so I did the chicken last Friday instead because I knew I would have enough for all of us!)

Monday: Baked Chicken Taquitos, Salad with southwest ranch dressing, fruit (winner- winner- chicken dinner! I actually ordered pizza here because we had a leak under our kitchen sink and I wanted to limit the dishes used until Scott could fix it on Tuesday. I made this on Tuesday for us instead)

Tuesday: Beef Pho (Because of the sink fiasco, I made the broth on Tuesday and Scott helped reheat it and slice the steak Wednesday when I got home from work. Once the broth is made, it's actually quite easy to toss together- Anyway, Scott was in heaven- spicy, steak soup!)

Wednesday: Scott cooks. Breakfast for Dinner- his choice (we cx BFD this week )

Thursday: Scott cooks. Spaghetti, Salad, Garlic breadsticks

Friday: Pizza Night, salad

Saturday: Pork Chops, mashed potatoes, carrots

Sunday: Picking up parents from the airport (over dinner time of course)- Easy cooking meal: pork roast in the crockpot? this recipe? Homemade rolls, salad and green beans.

Monday: Grilled Cheese (and Ham) Sandwiches, Tomato-Basil Soup from the freezer, salad, fruit
Tuesday: Carnitas Tacos (with the leftover pork roast), grapes, chips and salsa

Wednesday: Scott "cooks". Beef Stew (from the freezer), homemade rolls

Thursday: Scott cooks. Hangover hotdish (Thompson family recipe- similar to tator tot hotdish - which my family made- but with mashed potatoes on top and a layer of creamed corn between the meat and potatoes)

Friday: Scott's treat. Flank Steak, baked potatoes, salad

Saturday: Sichuan Style Stir Fried Chicken, rice, egg rolls

Sunday: Roast Chicken with Boursin Cheese, Roasted potatoes and asparagus, rolls

Monday: Grilled Cheese/ Ham and cheese, tomato-basil soup (from the freezer), apples, salad

Tuesday: Spiced Pork With Bourbon Glaze, sweet potatoes, Carrots (Scott really liked this recipe- though I did sub Jack daniels' for the bourbon because that is what we have)

Wednesday: Scott cooks. Breakfast for dinner. French Toast Bake, Bacon

Thursday: Scott cooks. Band Concert Night. Easy meal. Hotdogs with homemade buns, chips, beans, fruit salad

Friday: Chicken Noodle Soup Casserole , salad

Saturday: Roasted Italian Sausage, peppers and potatoes, Garlic breadsticks, salad

Lots of Bread baking this week, but I also promised Scott some cookies.... I was thinking these or these but poor Drew can't have caramel with his braces... so maybe I should make him some of these chocolate PB cup ones!

Menu Plan Monday

Sunday: Greek Chicken Thighs with Roasted Vegetables, Salad, rolls (I was inspired by this recipe)

Monday: Scott's r/s man-date night. Hashbrowns with leftover shredded beef, onions and peppers, eggs and toast

Tuesday: Homemade Chicken Soup and rolls - Instead of egg noodles that I normally use when I make soup, I decided to go the dumpling route after seeing this recipe. I don't remember ever eating a dumpling growing up (Scott did), so I never know if I am making them right because I have no idea what they are supposed to taste or look like... Scott, however, said they were great... oh and I added a little onion and garlic powder to the dumpling mix too because I really don't cook anything without onion and garlic... I

Wednesday: Scott cooks. Leftover enchiladas from the freezer, chips and salsa Amazingly, this recipe made 8 enchiladas, but 4 would have filled up 2 teenage boys, the hubby and myself- maybe it's because I used part of a bag of black beans instead of the cans (more volume?)

Thursday: Scott cooks. Pizza, salad

Friday: Chicken Stir fry, rice, eggrolls

Saturday: lasagna bowls, salad and breadsticks

Menu Plan Monday

Sunday: Spaghetti with homemade sauce, garlic bread, salad I actually made this penne with vodka sauce recipe- Scott loved it, Drew was sick and didn't eat and Jake said he preferred my other recipe!
Monday: Scott gone. Breakfast for dinner with the boys Scott's night out was cancelled due to the snow so we were all actually here for dinner- Jake requested waffles and bacon.
Tuesday: Sausage, Peppers and Onion Pizza, salad
Wednesday: Scott cooks. Salmon, rice and green beans I used the last of my Tastefully Simple Bold and Bossy honey mustard sauce on top of it to glaze the salmon.
Thursday: Scott "cooks". Crockpot Roast and vegies, homemade rolls
Friday: Black Bean and Corn Enchiladas, chips, salsa and guacamole Pushed from last week- I love a pantry meal that can be postponed if needed. I have some leftover beef roast that I may mix in with this.
Saturday: Basketball Tourney. Scott's off work early. Out?

Menu Plan Monday

Last week's menu was kind of a messed up, but overall good, one!
I made this black forest cheesecake recipe last week as a treat.... yum!

Sunday: Pork chops, mashed potatoes, carrots
Monday: Steak, sweet potato fries, salad (breakfast is red velvet doughnuts!)
Tuesday: Garlic Roast Chicken with Rosemary and Lemon, buttered noodles, corn on the cob (from the freezer) This was ok- I think I like my usual roast chicken better- too much liquid in this one!)
Wednesday: Scott cooks. BFD. Pancakes and sausage or Egg sandwiches
Thursday: Ham and cheesy potatoes, green beans (didn't get to last week) Woops! That package of "Ham" was actually roast beef- oh well- still worked out ok.
Friday: Black bean and corn enchiladas, rice, fruit Skipped this and made the boys buffalo chicken sandwiches.
Saturday: Out with friends- SNOW GOLF!!! kids get pizza

I also am going to be making some banana bread and probably the cookies I didn't get to last week.

Wednesday: Scott cooks. Breakfast for Dinner, Eggs, hashbrowns and toast
Thursday: Scott cooks. Ham, cheesy potatoes, vegies (This was actually bumped for french bread pizza)
Friday: Buffalo Chicken Pizza, salad (This actually was fettucini alfredo with crab)
Saturday: Date night? TBD (This actually was chicken fajitas and strawberries)

I also want to make...
Blueberry Breakfast Cakes (Yum- made these twice for me and the boys for breakfast! Recipe said it only makes 2 but we made 3)

Menu Plan Monday

Brie was on sale last week when I went shopping .... I "heart" brie... Brie on ciabatta bread... ummmmm..... imagine Homer Simpson drool face. I hate spending $3-5 on a loaf so I was determined to make my own with this recipe.

I also made a batch of these lemon blueberry muffins that I was addicted to this past summer.
Needless to say, it was not a low carb week!

This week's menu is a little boring, but it will do...

Sunday: Spicy Tuscan soup, crusty bread

Monday: Mushroom Marsala Burgers, sweet potato fries, fruit salad , Drew's High School Registration Night.

Tuesday: Lasagna Bowls, salad, garlic breadsticks

Friday: I am at conference for work. Scott cooks. Hot dogs, baked beans, chips, mixed vegies

Sunday: Chorizo and Black Bean soup, cornbread (Yummy- but I should have drained some of the grease- The cornbread recipe is amazing!)

Monday: Scott's gone, Pancakes and sausage?

Tuesday: Kung Pao Chicken Wings, Stir fry peppers and pea pods, rice, Egg rolls (very good change from my normal buffalo-style. I actually made a lo-mein with noodles and vegies-peppers, carrots, pea pods, green onions- instead of the rice)

Wednesday: Swedish Meatballs, noodles, mixed vegies

Thursday: Ham Steak, cheesy potatoes, green beans

Friday: Bean and Cheese Burritos, fruit (Easy- and, since I doubled the batch, I had leftovers for Sunday for me and the boys!)

Tuesday:Chorizo and Black Bean Soup, cornbread (skipped it this week- made beef and vegie soup instead)


Wednesday: Scott Cooks. Swedish Meatballs (meatballs are already made in the freezer- heat up in sauce and serve- I think he can handle it!), egg noodles, mixed vegies (skipped it this week- leftovers)


Thursday: Scott Cooks. Spaghetti, garlic bread, salad



Friday: Boursin Chicken, fingerling potatoes, green beans

Menu Plan Monday

I am working on a freezer and cupboard clean-out- so not too many new recipes this week-

Sunday: My famous Beef Stew, homemade rolls

Monday: Buffalo Chicken Tacos (wraps), fruit salad, Corn on the cob (frozen this summer) (the kids preferred my old buffalo chicken sandwich recipe- this is basically it, but on a tortilla intead of a ciabatta bun)

Tuesday: BLT(Bacon, Leeks and Tomato) Mac and Cheese, Salad - the extra leeks will probably make an appearance with the hashbrowns or stuffing to use them up!

Wednesday: Scott Cooks. Breakfast for dinner, Eggs, Hashbrowns with peppers and onions, Fruit Smoothies

Thursday: Scott Cooks. Turkey and Stuffing Casserole, green beans

Friday: Pizza Night

Saturday: Ranch Chicken and Rice, fruit (Scott really liked this meal)

Menu Plan Monday

Since the Twix cookies were such a hit with Scott and the boys, I made up another batch using this recipe but subbed Heath toffee chips instead of the Twix to bring to my parents house on the 26th- I think this might be my new favorite cookie recipe! I also made this wonderful Gooey Butter cake for our New Year's Eve (and Day) Celebrations- this Minnesota girl thinks those friends to the south got it right with this idea!

Sunday: Spaghetti Squash with Sausage and Kale, rolls (this bombed with Scott and the boys but I did finally use the last of my CSA squash!)

Monday: Spicy Beef Stir Fry with peppers, onions and snow peas, rice, egg rolls. (Yummy)

Tuesday: Buffalo Chicken Sandwiches (with homemade rolls from the freezer!), sweet potato fries, fruit salad?

Wednesday: Scott cooks. Johhny Garlic's Salmon, rice, green beans (ok- not the amazingness I was expecting)

Thursday: Scott cooks. Spaghetti, breadsticks, Salad

Friday: Scott's gone. Breakfast for Dinner.
