Menu Plan Monday

Sunday: Roast chicken (xs 2- I'm making extra for other meals this week), potatoes, squash casserole (Lunch: Mac and Cheese, okra fries) Squash Casserole was not so good... I even used a good cheese with it- what a waste!

Monday: Spicy Asian Chicken Soup, Sauteed summer squash (Lunch: Sandwiches, chips, cucumbers) Yummy soup! Kind of like a chicken pho recipe!

Tuesday: Fish (probably cod because it's on sale) with Zesty Basil Butter, orzo, CSA vegies, melon (Lunch: Chicken Quesadillas)

Wednesday: Scott cooks. Beer Braised brisket, mashed potatoes, CSA green beans (Lunch: Pizza) The brisket turned out ok... I think there are better recipes out there that can give it a little more flavor!

Thursday: Scott cooks. Tacos, Chips and Guac, melon (Lunch: chicken sandwiches, fries, vegies)

Friday: Friday Night Pizza Night (sausage and Pepperoni), salad (Lunch: sandwiches, chips, cucumbers)

Saturday: Pork tenderloin, possibly a stir fry, but we'll see. (Lunch: kid's choice) I actually marinated the pork in some cayenne,garlic and lime spiked italian dressing- I know it seems weird, but it really worked at giving it some tang and the cayenne added the hint of heat.... I roasted the port, let rest, thinly sliced... Sliced a baguette into slider size, opened up, toasted in the oven and topped with a spicy jalapeno havarti cheese- Made up the sandwiches with the pork slices, some romaine leaves and a smear of ranch dressing- YUM! I have another tenderloin in the freezer that will probably be getting this treatment in the future!

I also have to use up a zucchini, so I will probably be baking some Double Chocolate Zucchini Muffins. I have used a basic zucchini bread recipe from a cookbook, added cocoa powder and a little extra moisture and chocolate chips. But I may try this recipe. My mom loaded me up with a bunch of tomatoes, so I am going to attempt to can them whole (since I already have 8 jars of salsa and several containers of tomato soup in the freezer from my previous tomato adventures)
